Dairy hates me - but it's nothing personal

No sooner do I eat butter or ice cream or take a sip of a cow's milk latte (thinking it was almond milk and the barista got it oh so very wrong!) and I cough and mucous starts forming - it's actually gross. 

I've been allergic to dairy for most of my life - maybe my whole life. 

Maybe you have been too?

If you are allergic to dairy - it's really important to steer clear of it when trying to improve your hypothyroid symptoms. All of it sorry.

It's so important to avoid things you are allergic to while you heal your leaky gut. After that, you can re-introduce foods you were allergic to before and see if you still are. 

So I found out I was allergic in my twenties and I initially reverted to soy milk, soy ice cream, etc - and then the whole anti-soy information started appearing - I looked into the hormonal effects that soy had and I opted not to have it anymore. It's just not worth the risk for me - having an autoimmune disease and an underactive thyroid. Just not worth it!

Then I thought - ok I'll try almond milk - more and more cafes were now using it in coffees and to be honest it was not great to start with. They've improved over the years but I keep coming back to my own homemade almond milk which is dairy-free and additive-free as well as sugar-free. I know exactly what goes into it.

It's also really good!

So today - I will show you just how easy making almond milk at home is to do - every day.

Homemade Almond Milk

- 1 cup spray free or organic almonds
- 1 Litre alkaline water or filtered water
- 1 Tablespoon celtic sea salt or pink Himalayan salt
- Water for soaking the nuts

  1. Soak the almonds in a bowl or jug of water and the salt, overnight - add at least three times the amount of water to almonds.
  2. The next morning rinse off the water from the almonds in a sieve.
  3. Add the almonds to the nut milk maker nut basket.
  4. Secure the blender section to the basket.
  5. Fill the nut milk maker jug with alkaline or filtered water to the MAX fill line. Put the lid on and switch on.
  6. When done pour the milk into bottles and chill.

You can use the left over almond pulp to feed the birds - they love it - or use in place of almond flour and nut milk in your sugar free/grain-free baking.

Ps. if you don't yet have a nut milk maker - you can blend the nuts and water in a blender in liquid mode for 3 minutes. Then strain through a cheesecloth bag or nut milk
bag.
