I love Chia pudding - I have it every day as a snack!

I make Chia Pudding every few days for hubby and I to have for heathy keto snacks.
We both also like to have it with blueberries (if they are frozen it kind of turns the chia pudding into ice cream chia!), or with kiwifruit (yes that's what we call them here in New Zealand.
Also yummy with feijoas or boysenberries.
It's keto, paleo, gluten-free, dairy-free and guilt-free!
This chia pudding is easy and quick to make in just 5 minutes. I make it at night and then it's ready for the next day's snacks.

How to
- Shake the coconut cream can before opening then pour the can of coconut cream into a bowl
- Add the chia seeds, erythritol and vanilla extract to the same bowl
- Whisk until mixed well
- Cover and refrigerate until set
